Had my first 1-on-1 with the dietitian yesterday, and came away feeling much more positive. Not only did I get some clarity on the whole "what is cheese" issue (it can be counted as a dairy OR a protein OR a fat), but she agreed that restricting my caloric intake as drastically as had been done at intake was counterintuitive, so we tweaked my meal plan to give me a fair amount of flexibility.

Breakfast
2-3 grains
2-3 proteins
1 dairy
2-3 fats
Morning Snack
2-3 foods, 1 serving each
Lunch
2-3 grains
3-4 proteins
0-1 fruit
1-3 vegetables
0-1 dairy
2-3 fats
Afternoon Snack
2-3 foods, 1 serving each
Dinner
2-3 grains
3-4 proteins
0-1 fruit
1-3 vegetables
0-1 dairy
2-3 fats
Evening Snack
2-3 foods, 1 serving each
2 cups fluid at each meal/snack
* okay to have flavored water
or carbonated beverages
Dessert optional


I'm still not quite to the point where I feel full at the end of every meal, but I did only just start this last night at dinner. I have a lot more confidence that I will grow accustomed to these amounts of food, and I don't feel as though I'm being deprived of any particular item.
